up next…recipe requests…

ok. now I’m pretty sure I’ve mentioned more than once that I am a terrible cook.

not terrible as in stuff is always burned, more terrible as in, I’m not a fan of doing it, therefore my meals are boring and repetitive.

I’m working on this though. our hired man right now is nineteen and EATS a ton, and never complains.

I like cooking for people like that, so I have been expanding my meal repertoire and trying harder.

it is so much nicer cooking for someone who loves to eat, sure beats three complaining and picky kids.

(and a husband who would eat burnt hamburger, onions, mashed potatoes and creamed corn 7 days a week on purpose…blah.)

anyways…

I received some emails a while back from some girlies looking for some branding and meal/lunch ideas and suggestions.

eek.

y’all are asking ME for recipes?!

well. I have zero, zilch, nada, nothing.

that aren’t already on the web. no. seriously. I use pinterest religiously.

AND the two best cookbooks EVER.

The Pioneer Woman’s books are your new best friends. I have made MANY things from these books, and my husband and hired man rave about each one. she hasn’t failed me yet.

I even made doughnuts. HOMEMADE doughnuts.

see. she is a miracle worker!

and one thing that I have been getting better at is timing.

making sure things are all ready at the same time takes skill and A LOT of practice.

this is coming slowly. and my meals are better for it!

do you have any suggestions?

the requests have been for outdoor meal ideas and lunch ideas, two tricky ones!

    For a branding meal you have to throw calories out the window– My kid is Gluten and Dairy free usually, but for a big meal you have to go all out!

    The best tip I have is to make ahead and freeze. If your branding is cancelled, you haven’t wasted hundreds of dollars in groceries.

    For lunch I do chili with bowl of toppings like cheese,nacho chips, guacamole, sour cream etc..
    I also do a veggie tray, some fruit and a dessert. If is is not too hot sugar cookies bars are a big hit or donuts. I make and freeze the chili before.

    In the afternoon I bring out giant size freezies from Costco and leave a cooler of drinks out all day.

    For supper Barequed Beef Brisket, buns, a spinach salad with a homemade dressing, sautéed mushrooms, an amazing whipped mashed potatoes with a few bacon bits and cheese on top and scallions if no one is allergic. They taste like stuffed potatoes from a good steak house but are easier to transport to the pasture. Oh, and baked beans with spices and sweetness. For dessert , homemade pie with fresh whipped cream.

    The salad, beans and mushrooms are cooked fresh everything else is frozen. I put everything in the oven on low that way I can run out and help or eat early if they finish early.

    Longwinded, but it has taken me a while to get it down to a science.

    I love cooking and when the weather gets hot and its outdoor eating time, I am all about grain salads because they hold well and do not need to be refrigerated. Think orzo, spelt or wheat berries with veggies added like tomatoes and basil. Salads like Tabbouleh are great also and very refreshing.

    Ohhh I LOVE cooking!! For easy lunches, think different varieties of chicken salads (I make mine with greek yogurt instead of a ton of mayo, yum!) – waldorf, mediterranean, etc. Hungry Girl has these recipes. Stuff a pita with some chicken salad and lettuce and eat up!!
    For outdoor, grill and foil packs are soo easy!! A foil pack stuffed with diced potatoes, diced onions, sliced zucchini, sliced mushroom and diced sausage links (like summer sausage or brats), a little oil or butter and some creole seasoning!! Yum.
