Chili recipe…

Made this for a lot of hungry men the other night and it was a hit! So, of course, I’ll share! This one’s for all you farm wives out there madly cooking meals….

Quick Chili (from Company’s Coming 30 minute weekday meals)

1 tsp cooking oil
1 lb ground beef
1/2 cup chopped onion

Brown meat in oil, add chopped onion, cook till onion is soft.

1 tbsp Chili powder
1 tsp cumin (I didn't use)
1 tsp sugar
1/2 tsp basil
1/2 tsp crushed chilies
1/2 tsp salt

And these 6 ingredients to beef. Heat and stir for 1 minute until fragrant.

14 oz. diced tomatoes with juice
14 oz. Can of Kidney beans, rinsed and drained
Can of tomato sauce

Add last 3 ingredients. Stir well and bring to a boil. Reduce heat and simmer uncovered for about 5 minutes. Stir occasionally.

Serves 4.

~ I pretty much added and subtracted to my taste. I used 4 lbs of beef and then adjusted the recipe till it tasted fabulous! And I used this Popover recipe to go with it….Hope you enjoy!! ~

Meatballs…

For Christmas last year my mother in law gave me The Pioneer Woman’s Cookbook….

Amazing recipes that my husband (the die-hard meat and potato man) LOVES!

This woman cooks for her four kids, husband and numerous cowboys. She knows what she is talking about!!

One of our new favorite recipes is her BBQ Meatball recipe (click for the link!) and although her version is fabulous, I have changed one thing.

Instead of browning the meatballs and then baking it all…I just pop my meatballs in boiling water.

Yes, you heard me right.

I learned this trick a long time ago from I can’t remember where. And I love it.

Really and truly you boil a pot of water, roll up your meatballs however you normally make them (salt/pepper/egg/oatmeal/etc) and then just gently drop them into the pot of boiling water! After the last meatball is in, set the timer for 7 minutes and ta da!

Your meatballs are cooked and a lot of the fat floats to the top making them that much more healthy! (Good ol’ red meat!)

Make sure you watch the pot…has a tendency to boil over…not fun. And I ladle the fat off the top as it boils.

Then I just finish the rest of the meatball recipe…yummy!!

Makin’ Jelly…

I mentioned this on facebook a little while back…a bunch of us farm wives got together, drank coffee (see all the Starbucks cups?!), laughed (A LOT!!) and made some red pepper jelly. It was so much fun that we’ve since gotten together again and made cookies (for harvest and Christmas). Here are a few pics from the jelly making and the link for the yummy recipe!!

Harvest meals…

As I stand here in my kitchen blogging (don’t ask…) I am snacking (gorging) on eatmore bars. These things are not only delicious…but super easy to make! My husband loves them in his lunch…and now that the swathers are rolling, making lunches is a daily occurence. And once the combines get going I pack anywhere from 1 to 4 lunches on any given day….and sometimes I get 15 minutes notice. Fun!

Anyways….these eatmore bars are heaven, easy and freeze well. A fantastic solution for the lunch dilemma. I got the recipe from my old trusty 4-H cookbook circa. 1997…do they make these anymore and where do I find one if they do?!

Eatmore Bars

2 cups Chocolate chips

1 cup Corn syrup

1 cup Rolled oats

2 cups Crushed peanuts (I have used almonds, walnuts..etc.)

1/2 cup Peanut butter

Melt choc. chips and corn syrup in a large pot on low heat. Take off heat, add rolled oats, peanuts and peanut butter. Spread on greased cookie sheet and let cool. Cut into squares and refrigerate. (I just put the pan right into the fridge and cut up later…and rip a few pieces off here and there as I walk by the fridge.)

The BEST porkchops ever!

This is a recipe that we use a lot, I got it from a booklet at the “Put pork on your fork” booth at the Calgary Stampede.

LOVE IT!!

Pickling carrots…

I am about to start an adventure that I have never attempted before. Pickling carrots.

I have tried cucumbers before…not a fan of the result. Too much pickling spice, no dill. This time I am armed with a recipe from the internet (meaning someone else’s!) and my pure talent (ha!).

Wish me luck!

And any tips would be greatly appreciated!! (Kelli & Tony this means you…..PLEASE let me have that recipe!!)

Oh, and if it works, I’ll put up the recipe…if it doesn’t, we will never mention this again, ok?!

Claire Soup

What is Claire Soup you ask?!?

Only the bestest, easiest, fastest soup in the west! (Yes…I think I’m funny!) It is a soup that my husband named after my sister after he tried it for the first time.

It’s his thing…if it’s fantastic and he really,really,really wants you to make it again, it gets named after you! I have a chili….(from The Pioneer Woman cookbook…but don’t tell him that, he thinks I’m amazing!!!)

Anyways…my sister got this recipe from Rachael Ray…and it’s the best!

1 can of beef or chicken broth

1 cup water

1 package of tortellini

1 cup of grated cheese

Boil the broth/water, add as much tortellini as you want, when noodles are ready, put into bowls and cover in cheese. SO GOOD!!!!!!
